The warm days of summer are finally here. My kids can’t wait to go outside for a Picnic or go to the beach and they love playing in our backyard. We just spent the last couple of days having dinner at the beach. Abi and Camilla both love playing in the sand and water whereas Bridget much preferred to chill in the shade with me observing.



















This summer I'm excited to get out exploring our Island and I've started planning some delicious, easy-to-make recipes that I am going to share with you today.


Picnic recipes are different than others they have to fill a lot of criteria. They shouldn’t get soggy, don’t require a certain temperature to enjoy them; hot or cold, and they shouldn’t take too much time to prepare or can be prepared beforehand. For our family, they also need to satisfy kids' taste buds and should be easy to pack.


I have chosen easy recipes that are mostly prepared from pre-made seasoning and dips. And of course, these dishes travel well.


Donair




Ingredients

2 lbs (900 g) lean ground beef

1⁄4 cup water

10 whole-wheat pitas

2 tomatoes, sliced

1⁄2 English cucumber, sliced

1⁄2 red onion, thinly sliced

1⁄2 head romaine or leafy green lettuce


Preparation


Microwave:

  1. In large bowl, combine seasoning with beef and water until well blended.

  2. Press into Rectangular Steamer. Cover and microwave on high for 13 min.

  3. To serve, thinly slice meat. Serve on pita with East Coast Donair Sauce or Dillicious Tzatziki (if using), tomatoes, cucumber, red onion, and lettuce.

Oven:

  1. Preheat oven to 375° F.

  2. In large bowl, combine seasoning with beef and water until well blended.

  3. Press into 9” x 5” loaf pan. Bake in preheated oven for 1 hour.

  4. To serve, thinly slice meat. Serve on pita with East Coast Donair Sauce or Dillicious Tzatziki (if using), tomatoes, cucumber, red onion, and lettuce.

I have two assortment ideas you can make with Creamy Garlic Hummus Dip. You can make Crispy Roasted Chickpeas. They Will remain good and fresh during the hot picnic weather. They are very easy to make and very very easy to transport.


Crispy Roasted Chickpeas




Ingredients

1 can (19 oz) chickpeas

2 tbsp olive oil

Sea salt to taste


Preparation

  1. Drain and rinse the whole can of chickpeas; pat dry with a kitchen towel.

  2. Place on a Sheet Pan lined with a Sheet Pan Liner.

  3. Drizzle with olive oil and dip mix and generous twists of Sea Salt; stir to evenly coat.

  4. Roast in preheated 400° F oven for 20 min or until golden brown and crisp.



Best eaten same day they’re made. Great in nourish bowls!



Let’s add some fruits to the party, shall we? For this recipe, you have to make the typical hummus with Creamy Garlic Hummus Dip.



Apple Hummus Bites


I always love to add some fruits to the party when kids are outside they're are looking at things differently. Everything is candy just because they are having fun. For this recipe, you have to make the typical hummus with Creamy Garlic Hummus Dip.


Preparation


Slice 2 apples into rings; discard any seeds.

Spread each slice with 1 tbsp prepared hummus.

Sprinkle chia seeds, if you wish, or try Everything Bagel Whole Food Topper.



Hummus-Zing Dressing pasta salad




Let’s make things easier by also making a pasta salad with the same Creamy Garlic Hummus Dip. here’s how


  • Whisk 2–3 tbsp prepared hummus with 1 tbsp lemon juice, and water to thin it out (about ¼ cup).

  • Toss with cooked cooled pasta, chopped tomatoes and cucumber, sliced red onion, and top with olives.


No picnic is complete without a handheld chicken dish. I have chosen Wings because they are cheap, delicious, and loved by everyone. So here is a very very easy recipe.


Taco Chicken Wings





Ingredients

2 tsp lemon juice

1/4 cup vegetable oil

2 tsp hot sauce

1/2 tsp salt

2 lbs (1 kg) chicken wings


Preparation


  1. In a mixing bowl, whisk together marinade ingredients. Add wings, tossing to coat. Wings can be cooked immediately or marinated in the refrigerator for up to 24 hours.

  2. Preheat oven to 400° F (205° C).

  3. To cook, arrange prepared wings on a parchment-lined Sheet Pan and bake for 20 minutes. Broil wings for 30 minutes on each side, or until crisp and brown.

Per serving: Calories 510, Fat 37 g (Saturated 10 g, Trans 0 g), Cholesterol 175 mg, Sodium 760 mg, Carbohydrate 1 g (Fiber 1 g, Sugars 0 g), Protein 42 g.


Tips

2 lbs (1 kg) chicken wings equal approximately 25 - 30 wings. If you buy whole wings, remove tips and freeze until the next time you need to make prepared Epicure Chicken Bouillon. Split wings at the joint to make 2 pieces. Serve with your choice of our wonderful Epicure Dips.

Egg English Tea Sandwiches



Other picnic staples also include bread and eggs so let’s add them into the basket after turning them into an easy sandwich. It's also made in just 10 minutes.


Ingredients

1 cup Guacamole dip

12 slices rye bread

6 hard-cooked eggs, peeled and sliced

1⁄4 red onion, sliced into rings


Preparation


  1. Spread Guacamole over bread.

  2. Layer egg over top and sprinkle with Salt and Pepper. Top with onion rings.

Per serving: Calories 160, Fat 7 g (Saturated 2 g, Trans 0 g), Cholesterol 125 mg, Sodium 320 mg, carbohydrates 18 g (Fiber 2 g, Sugars 2 g), Protein 7 g.


At last, it's dessert time.


Chocolate Bliss Brownies with Chocolate Fudge Sauce


After working so hard preparing for the picnic treat yourself with these chocolaty fudgy brownies with a cup of tea of course.


Ingredients

2 eggs

1⁄2 cup butter, melted unsalted

1 cup whipping cream


Preparation

  1. Preheat oven to 350° F (160° C).


Chocolate Fudge Icing:

  1. In a Multipurpose Pot - 8 cup, whisk sauce mix with whipping cream. Bring to a boil.

  2. Using a hand mixer, beat sauce to desired thickness.


Chocolate Bliss Brownies:

  1. Lightly oil a Round Cake Pan.

  2. In a large bowl, whisk eggs with melted butter. Stir in brownie mix then spread batter into pan.

  3. Bake for 15–20 min. Cool in pan before icing.

  4. Spread chilled icing and top with whole food sprinkles, cut and enjoy

Tips

To make mini Yule logs, simply bake the recipe in Perfect Petite's mold, ice with Chocolate Fudge Sauce, and decorate festively!
